Linnalla pure Irish ice cream is hand-produced on the farm of Brid and Roger Fahy in the Burren region of Ireland. They use whole milk and cream from their own herd of Short Horn cows, native to the Burren, to create ice cream free from artificial flavours, colours or preservatives. The farm has traditionally been a dairy yard since the 1800's, and the decision to diversify into ice cream making was only taken recently by Brid and Roger. They are one of the most eco-innovative farms in the Burren region, and while their ice cream business is just starting, prospects look exciting! The pictures in this album are from a recent trip by Eco Innovation members to visit the farm at Linnalla, to chat about their decision to leave behind intensive farming, and to taste some of their unbelievably delicious ice cream!
